Sherwood Forest Chicken
MAKES ABOUT 4 SERVINGS
WHAT YOU WILL NEED
INGREDIENTS
a lemon squeezer tongs
a barbecue grill or broiler and broiler pan
4 chicken thighs (easier to cook than breasts) or 4 drumsticks, or two of each
juice of half a lemon
1 tablespoon olive oil or butter
1. Start the barbecue grill or the broiler.
2. Rub the chicken pieces all over with lemon juice. The drumsticks will take a little longer to cook so put them on first if you are cooking both thighs and drumsticks. Put them on the barbecue grill or under a hot broiler.
3. Brush or drizzle about a third of the olive oil over the chicken, and cook for 5 minutes. Be careful of flames around oil on the barbecue grill.
4. Turn them over, pour half the remaining oil over them, and cook for another 5 minutes.
5. Turn them over again, pour the rest of the oil over them, and cook for 5 minutes. Pierce the meat with a sharp knife or skewer and if the juice is clear the chicken should be cooked and tender. If the juice is pink, cook the chicken a little longer, then test it again.
